Sue's Shortbread Cookies
Recipe Revision - The amounts have been revised.
½ cup butter (room temp)
½ cup icing sugar
a
2/3 cup white rice flour
½ cup corn starch
¼ cup potato starch
2 tbsp tapioca starch
Mix dry ingredients together in large bowl. Cut butter into large pieces and add to dry ingredients. Knead dough until the butter is incorporated and dough releases from sides of bowl. It will seem like it won’t come together, but keep kneading and it will.
Roll into small balls, place on baking sheet, press with a fork and decorate with coloured sugar.
Bake at 325° for about 26 mins. Makes 24-30 cookies.
Flattened dough balls can be frozen to be baked off later.
Sue's Chocolate Chip Cookies
½ cup butter (room temp, or cool)
1 ½ cup brown sugar
1 egg
1 ½ tsp vanilla
¾ cup white rice flour
1 cup gluten free oat flour
¼ cup potato starch
2 tbsp tapioca starch
1 tsp salt
1 ½ tsp baking soda
½ cup ground almond meal
1 pkg 270g or 1 ½ cups semi-sweet chocolate chips
Mix dry ingredients (not chocolate chips) in a bowl.
Blend wet ingredients in mixer until smooth consistency. Add dry ingredients by scoop until well incorporated. Add chocolate chips and mix till evenly dispersed.
Use small scoop to make dough balls or roll by hand. Place on parchment lined baking sheet.
Bake at 350° for 12-14 mins.

Sue's Orange Chocolate Cookies
½ cup butter (cool, cut into small cubes)
½ cup brown sugar
½ cup white sugar
1 egg
1 tbsp vanilla
1 orange orange zest
1 cup white rice flour
¼ cup brown rice flour
½ cup potato starch
¼ cup tapioca starch
2 tbsp milk powder
½ tsp salt
2 tsp baking powder
½ cup semi-sweet chocolate chips
½ cup white chocolate chips
Mix dry ingredients (not chocolate chips) in a bowl.
Blend wet ingredients in mixer until smooth consistency. Add dry ingredients by scoop until well incorporated. Add chocolate chips and mix till evenly dispersed.
Place dough in plastic wrap and roll into 1 ½ inch logs, place in freezer to firm up. Cut into 1 inch pieces and place on parchment paper
Bake at 350° for 12-14 mins. Makes approximately 45 cookies.

Recipe Revision - I had normally used soy flour in this recipe, but understand it is now difficult to find. I love these cookies made with gluten free oat flour just as much.
